As promised, here is the result of the tomato marathon.
My roasted tomatoes end up looking like this. No more watercolor effect, just mush.
See? No liquid left. But the mixture is not stiff.
I spoon the contents of the pan into freezer bags.
Fold them over to get all the air out.
And freeze. This stuff is AWESOME. Full of flavor and very versatile. It is yet one more thing to do in this busy harvest season, but well worth the effort.
